A Simple Lentil Soup

A simple Lentil soup

Story

I have to say that this is another great comfort food for me. Every time it is a bit grey and dark outside (like today), I want to make soup. Especially this one. So easy to do and so delicious. You can make a lot and freeze what it’s left over for the rest of the week.

When I was a child, I wasn’t very fond of soups. They were really boring to me. Now it is probably the dish that I eat the most. Winter or summer… Doesn’t make any difference for me! I just love it.
With some good bread and a glass of red wine, it’s perfect!

Ingredients

- 1 onion, chopped
- 2 carrots, chopped
- 1 clove of garlic, chopped
- 1 can (medium) of chunked tomatoes
- 1 1/2 cup of dried lentils
- 6 cups of beef stock
- 2 tablespoon of olive oil
- 2 dry bay leaves
- a pinch of nutmeg
- 1 teaspoon of Paprika
- 1 teaspoon of Cumin
- 1/3 teaspoon of Ginger powder
- Sea salt and fresh cracked black pepper

Heat the olive oil in a cast iron pot and cook the onion and garlic gently over low heat for 8-10 minutes. Add the nutmeg, paprika, cumin and ginger powder and stir in. Let cook for another 3-4 minutes. Add carrots and let cook for another 3 minutes. Add chunked tomatoes and lentils. Stir well. Add stock and the bay leaves, cover, and simmer for 45 minutes or until the lentils are tender and mushy.

Season to taste with sea salt and freshly ground pepper.

Serves 4.
